A recent dinner favorite of mine, this vegetable/mozzarella combination has been delicious, filling and healthy too!To make:
1/2 medium size tomato
1/2 avocado
1/4 mozzarella ball
1 ear of corn, boiled and cut off the ear
1/4 small red onion
*chop up everything, sprinkle a little salt & pepper, top w/ balsamic vinaigrette and serve!
